Tomato Parmesan Couscous

This Tomato Parmesan Couscous is made from a delicious homemade tomato sauce using cherry tomatoes and our Zoup! Good, Really Good Veggie Broth.

Ingredients

  • 1 tbsp olive oil
  • 1 pint cherry tomatoes
  • 1 tsp salt
  • ½ tsp pepper
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tsp red pepper flakes
  • 1 tsp Italian seasoning
  • 4 cups of Zoup! Good Really Good® Veggie Broth
  • Leftover parmesan rinds
  • 2 tbsp lemon juice
  • 1 cup Israeli couscous
  • Basil for garnish

Instructions

  • Heat olive oil over medium heat in a large pot. Add the cherry tomatoes and mix them into the olive oil until well coated. Add the salt and pepper. Toss the cherry tomatoes.
  • Cook the tomatoes for 10 minutes or until the tomatoes begin to burst.
  • Add the onion, garlic, red pepper flakes, and Italian seasoning. Cook until the onion begins to be translucent and fragrant.
  • Add the Zoup! Good, Really Good® Veggie Broth and parmesan rinds. Bring to a boil and then reduce heat to low. Cover and simmer for 30 minutes.
  • Remove the parmesan rinds and stir in the lemon juice. Add the couscous and cook for 10 minutes.
  • Enjoy hot and garnish with fresh basil!

Ingredients

  • 4 cups pasta cook according to package directions in Zoup! Good, Really Good® Chicken Broth
  • 1 ½ cup halved cherry tomatoes
  • 1 ½ cups diced cucumber
  • 1 cup crumbled feta cheese
  • ¾ cup olive oil
  • ¼ cup white wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp ground black pepper
  • 2 tsp honey

Instructions

  • In a large pot, boil Zoup! Good, Really Good® Chicken Broth. Then prepare the pasta according to the directions on the box.
  • Drain pasta and then toss the pasta with the tomatoes, cucumber and feta cheese in a large bowl.
  • Combine remaining ingredients in a jar and shake well. Pour dressing over salad, mix and enjoy!

Ingredients

  • tbsp olive oil
  • 1 lb broccoli chopped
  • 1 lb spinach
  • 3 celery stalks chopped
  • 2 cloves garlic minced
  • 2 tbsp ginger grated
  • 1 can coconut milk
  • 3 cups Zoup! Good Really Good® Veggie Broth
  • 1 tsp turmeric powder
  • Salt and pepper to taste
  • 6 tbsp Greek yogurt for garnish
  • 6 tbsp pumpkin seeds for garnish
  • ¼ cup cilantro for garnish

Instructions

  • In a medium to large pot, heat the olive oil over medium heat. Add the celery, garlic and ginger and cook or a few minutes until fragrant.
  • Add the broccoli, spinach, coconut milk, and Zoup! Good, Really Good® Veggie Broth. Bring to a boil. Reduce heat to simmer and cook for 10 minutes or until broccoli has softened.
  • Blend in a blender until smooth. Serve each bowl with Greek yogurt, pumpkin seeds and cilantro. Enjoy!

Are you following a Low Fodmap diet? Try this Low Fodmap Chicken and Rice soup in your pressure cooker using our Zoup! Good, Really Good Chicken Broth!

Ingredients

  • 1 lb boneless skinless chicken breasts
  • 2 tbsp olive oil
  • ½ cup leek finely chopped
  • 2 carrot sliced
  • 1 celery stalks sliced
  • ¾ cup rice
  • ½ tsp oregano
  • ½ tsp basil
  • ½ tsp thyme
  • 3 cups Zoup! Good Really Good® Chicken Broth
  • 2 cups water
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  • Chop chicken into cubes and set aside.
  • Turn pressure cooker on to “Saute” and warm olive oil. Then add the leeks, carrots, and celery and saute until veggies begin to soften.
  • Add the chopped chicken, salt, and pepper. Saute for 2 minutes.
  • Add the rice, oregano, basil, and thyme. Stir until well combined.
  • Press cancel on the pressure cooker. Add 1 cup of Zoup! Good, Really Good® Chicken Broth and stir until nothing is stuck to the sides of the pressure cooker. Add the remaining broth and water. Stir and close the lid.
  • Set pressure cooker to “Pressure Cooker” and then “High.” Set timer for 4 minutes. One the timer goes off, let the pressure release naturally.
  • Open the lid, serve and enjoy!

One Pot Chicken with Couscous

Ingredients

  • ½ tbsp olive oil
  • 3 – 4 bone-in chicken thighs
  • ½ tsp salt
  • ½ tsp pepper
  • ½ onion chopped
  • 2 cloves garlic minced
  • ½ tsp cumin
  • ½ tsp paprika
  • 1 cup hot water
  • 1 tsp Zoup! Good Really Good® Chicken Bone Broth Concentrate
  • 2 tbsp lemon juice
  • 1 bell pepper chopped
  • ½ cup couscous
  • ¼ cup feta cheese crumbled
  • 1 green onion chopped
  • ½ cup cherry tomatoes halved

Instructions

  • In a large pot, heat olive oil over medium heat. Add chicken to the pan and season with salt and pepper. Cook chicken until browned on both sides.
  • Move chicken to side of pan and add the chopped onion. Cook until onion is translucent. Add the garlic, cumin & paprika. Stir into the onions.
  • Pour in 1 cup of water and 1 tsp Zoup! Good, Really Good® Chicken Bone Broth Concentrate. Bring to a boil. Once it is boiling, reduce to simmer, cover the pot and cook for 10 minutes.
  • Take the lid off and using a thermometer make sure the chicken has reached 165 degrees Fahrenheit. Once the chicken is cooked, remove from pan and set aside.
  • Pour the lemon juice, chopped pepper and couscous into the pan. Stir until well combined. Return the chicken to the pot, cover with lid and cook for 5 minutes.
  • Remove lid and fluff up the couscous with a fork. Once couscous is finished cooking, sprinkle with fete, chopped green onion and cherry tomatoes. Serve and enjoy!

Ingredients

  • 4 cups Zoup! Good Really Good® Chicken Broth
  • 2 tbsp butter
  • ½ cup shallots chopped
  • 1 clove garlic minced
  • 1 cup risotto rice
  • ½ cup white wine
  • ½ cup Parmesan cheese shredded
  • 1 tbsp balsamic vinegar
  • 1 pinch of Italian seasoning
  • 1 cup cherry tomatoes halved
  • Basil leaves for garnish

Instructions

  • Bring Zoup! Good, Really Good® Chicken Broth to a simmer and keep warm.
  • In a separate pot, melt butter and then saute shallots until translucent. Add the minced garlic and cook for 1 minute.
  • Add the rice to your pan and cook until the rice begins to brown. Stir in the wine and cook until liquid is absorbed.
  • Using a ladle, pour in a ladleful of the warm Zoup! Good, Really Good® Chicken Broth into the rice and cook until the rice has full absorbed the liquid. Continue this one ladleful at a time until the rice is al dente.
  • Once the rice is cooked, add the balsamic, Italian seasoning, cherry tomatoes and last ladleful of broth. Cook until the tomatoes begin to soften.
  • Remove from heat and add the parmesan cheese. Garnish with basil and enjoy!

Ingredients

  • 1 lb ground beef
  • 1 egg
  • 2 tbsp chopped parsley
  • 2 garlic cloves minced
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 2 tbsp grated parmesan cheese
  • ¼ cup Italian breadcrumbs
  • ¼ cup milk
  • 1 24 oz can crushed tomatoes
  • ½ cup Zoup! Good Really Good® Beef Bone Broth
  • 1 6 oz can of tomato paste
  • 2 bay leaves
  • Pinch of red pepper flakes
  • ½ tsp Italian seasoning
  • 4 sub rolls
  • 8 slices mozzarella cheese

Instructions

  • In a large slow cooker, mix together the crushed tomatoes, Zoup! Good, Really Good® Beef Bone Broth, tomato paste, bay leaves, red pepper flakes, & Italian seasoning.
  • In a large bowl, mix the ground beef, egg, parsley, garlic cloves, salt, black pepper, parmesan cheese, breadcrumbs and milk together. Form into meatballs and place into the slow cooker. Cover and cook on low for 4 hours or until fully cooked.
  • Preheat the oven to 350 degrees. Cut your sub rolls and fill with meatballs. Place a slice of mozzarella on the top and bake until the cheese is melted – about five minutes.

Ingredients

  • 2 tbsp olive oil
  • 1 lb pork sausage
  • 1 shallot thinly sliced
  • 4 garlic cloves minced
  • 1 pinch chili powder
  • 1 pinch chili flakes
  • 2 cups white wine
  • 2 tsp Zoup! Good Really Good® Beef Base with Bone Broth
  • 1 ¾ cups fire roasted tomato
  • 2 ½ cups water
  • 1 lb bucatini
  • Salt & pepper to taste
  • Shredded parmesan for garnish

Instructions

  • In a large pot over medium heat, brown the pork sausage with 1 tbsp of olive oil. Once cooked, remove from pan and set aside.
  • Add another 1 tbsp of olive oil and saute the shallot and garlic until translucent. Add the chili powder and chili flakes and stir until well combined.
  • Deglaze the pan by adding the white wine and stir. Cook until slightly reduced and then add the Zoup! Good, Really Good® Beef Base with Bone Broth. Stir until well combined.
  • Add the fire roasted tomato and water. Bring to a boil.
  • Add the bucatini and cook for 10 minutes covered, stirring occasionally.
  • Once the past is cooked to your liking, add the sausage back in.
  • Serve immediately and garnish with shredded parmesan cheese.

Ingredients

  • 2 tbsp butter
  • ¼ cup flour
  • 1 cup water
  • 2 tsp Chicken Bone Broth Concentrate
  • 1 cup warm milk
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • 2 cups cooked chicken
  • 1 tsp minced garlic
  • 2 tbsp Ranch Dressing Seasoning mix
  • 1 cup sour cream
  • 2 cups mozzarella cheese
  • 7 slices of bacon chopped
  • 8 ounces cooked penne pasta

Instructions

  • First, we make the cream sauce for the casserole. Melt the butter in a saucepan over medium heat. Gradually add the flour and whisk until it looks like wet sand. Remove from heat.
  • Add the water and Chicken Bone Broth Concentrate and whisk well. Then add the warm milk and seasonings. Whisk continuously and turn heat up to medium. Whisk until it gets thick.
  • Preheat oven to 350 degrees. Grease a 9×13 inch casserole dish and set aside.
  • In a large mixing bowl, add the cream sauce, chicken, garlic, ranch dressing seasoning mix, 1 cup sour cream, 1 cup mozzarella cheese, half of the chopped bacon, and pasta. Gently mix until well combined.
  • Add the casserole ingredients to your casserole dish. Then top with remaining cheese and bacon.
  • Bake for 15 – 20 minutes and enjoy!

Ingredients

  • 1 tbsp olive oil
  • 1 onion chopped
  • cup celery chopped
  • 2 garlic cloves minced
  • 32 oz chopped raw clams
  • 4 cups Zoup! Good Really Good® Seafood Broth
  • 5 red potatoes diced
  • 2 ½ cups heavy cream
  • 10 tbsp butter
  • cup flour
  • Salt and pepper to taste

Instructions

  • In a medium saucepan, saute onion, celery and garlic in olive oil until onion is translucent.
  • In a large soup pot, bring clams, Zoup! Good, Really Good® Seafood Broth and potatoes to a boil. Reduce to a simmer and add the onion, celery and garlic into the pot.
  • In the skillet, melt the butter over medium heat. Whisk in the flour and turn heat to low. Stir until fully incorporated. Turn the heat off and stir in the cream until smooth.
  • Add the cream mixture into the soup pot and stir until combined. Season with salt and pepper to taste. Simmer for 15 minutes.
  • To serve in a bread bowl, carve out the center of a round loaf. Then fill the bread bowl with chowder. Garnish with croutons and parsley and enjoy!

Ingredients

  • 1 tbsp olive oil
  • 2 salmon fillets
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp butter
  • 2 cloves garlic minced
  • ¾ cup halved cherry tomatoes
  • 1 cup arugula
  • ¼ cup cream
  • ¼ cup Zoup! Good Really Good® Seafood Broth
  • cup grated parmesan cheese

Instructions

  • Prepare salmon fillets by patting the salmon dry with a paper towel. Then season the salmon with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat for 2 – 3 minutes.
  • Once the pan is hot, add the salmon, skin side up. Leave the salmon for 6 minutes to cook. Flip and cook for 2 more minutes. Transfer to a plate.
  • Reduce heat to low. Add the Zoup! Good, Really Good® Seafood Broth to the pan to deglaze the pan. Scrape any salmon from the pan. Add the butter and let it melt. Stir in the garlic and cook until you begin to smell the garlic.
  • Increase heat to medium and add the cherry tomatoes. Season with salt and pepper. Cook until the tomatoes begin to soften.
  • Stir in the heavy cream & parmesan. Reduce heat to low and stir in the arugula until it begins to wilt.
  • Return salmon back to pan and spoon over sauce. Simmer until the salmon is cooked through. Serve and enjoy!
