Watermelon, Cucumber & Mint Quinoa

The secret to the tastiest quinoa? Zoup! Good, Really Good®broth. Simply follow the cooking instructions for your couscous but replace water with broth.

  • 1 ¼ cups Zoup! Good Really Good® Veggie Broth
  • 1 cup couscous
  • ½ tsp salt
  • 2 limes
  • 2 tbsp EVOO
  • 1 tsp honey
  • Pepper to taste
  • 1 ½ cups cubed watermelon
  • ½ cup cucumber
  • ¼ cup mint
  • ½ cup crumbled feta cheese


  1. Place Zoup! Good, Really Good® broth in a medium sauce pan and bring to a boil. Remove from heat and stir in couscous. Let sit for 10 minutes or until all liquid is absorbed. Fluff up with fork.
  2. Meanwhile, zest the limes and squeeze the fruit until you have about 3 tbsp lime juice. Add to small bowl and mix in EVOO, honey and salt & pepper to taste.
  3. Once the couscous has cooled, add the watermelon, cucumber, mint, feta and dressing. Stir to combine and enjoy!
