Lemon, Chickpea & Rice Soup

Thirty minutes is all you need for this easy Lemon Chickpea Rice Soup made with our Zoup! Good, Really Good® Broth.

  • tbsp olive oil
  • 1 white onion chopped
  • 3 carrots peeled and chopped
  • 10 cloves garlic minced
  • ¾ cup rice
  • 2 tsp italian seasoning
  • 1 tsp red pepper flakes
  • 8 cups Zoup! Good Really Good® Chicken Broth
  • 1 sprig of rosemary
  • ½ tsp black pepper to taste
  • 2 15 oz cans of chickpeas
  • ½ cup lemon juice
  • Salt to taste


  1. dd olive oil to large pot over medium heat. Add onion and carrot and cook until onions are translucent.
  2. Add garlic, rice, italian seasoning, and red pepper flakes. Cook for about 2 more minutes.
  3. Add Zoup! Good, Really Good® broth and rosemary. Increase heat to high. Once it begins to boil, reduce to low and simmer for 10 minutes.
  4. Add chickpeas and cook for another 3 minutes. Then turn heat off and add lemon juice and salt to taste.
