White Beans with Rosemary & Garlic

These rosemary and garlic white beans are an excellent summer side dish to enjoy on a salad, side or on top of bread.

Ingredients

  • 1 cup dry white beans
  • 2 cups water
  • 1 tsp baking soda
  • 4 cups of Zoup! Good Really Good® Veggie Broth
  • 3 cloves garlic diced
  • 2 sprigs rosemary
  • ¼ onion cut into wedges
  • ½ tsp salt
  • 2 tbsp olive oil
  • 1 tbsp lemon juice

Instructions

  1. Soak the beans in water and baking soda overnight. The beans will double in size.
  2. Add the beans, Zoup! Good, Really Good® Veggie Broth, garlic, rosemary, and onion to a Crockpot. Cover and cook on high for 6 hours or until beans are tender. Depending on how soupy you like your beans, you may want to add more Zoup! Good, Really Good® Veggie Broth.
  3. Once the beans are finished, serve in a bowl and garnish with olive oil, lemon juice, rosemary and salt and pepper.
