Lentil Vegetable Soup

Add some veggies into the rotation with this delicious Lentil Vegetable Soup.

Ingredients

  • tbsp olive oil
  • 1 ½ cups diced carrot
  • 1 yellow onion chopped
  • 4 cloves of garlic minced
  • 2 cups of Zoup! Good Really Good® Veggie Broth
  • 2 cans diced tomatoes
  • 1 cup of dried lentils
  • 1 tsp dried basil
  • ½ tsp oregano
  • ½ tsp thyme
  • 1 medium zucchini diced
  • 2 cups packed kale
  • 1 tbsp lemon juice
  • 1 cup water
  • Salt and pepper to taste

Instructions

  1. Add olive oil to a large soup pot and saute the carrot, onion and garlic until the onion is translucent.
  2. Add Zoup! Good, Really Good® Veggie Broth and tomatoes, stir until well combined. Add lentils and spices. Bring to a boil, cover and simmer for 30 minutes stirring occasionally.
  3. Add the kale and zucchini. Cook for an additional 10 minutes.
  4. Stir in lemon juice and water until you’ve reached desired consistency.
