Ingredients
tbspolive oil
1 ½cupsdiced carrot
1yellow onion chopped
4clovesof garlicminced
2cupsof Zoup! GoodReally Good® Veggie Broth
2cans diced tomatoes
1cupof dried lentils
1tspdried basil
½tsporegano
½tspthyme
1medium zucchini diced
2cupspacked kale
1tbsplemon juice
1cupwater
Salt and pepper to taste
Instructions
Add olive oil to a large soup pot and saute the carrot, onion and garlic until the onion is translucent.
Add Zoup! Good, Really Good® Veggie Broth and tomatoes, stir until well combined. Add lentils and spices. Bring to a boil, cover and simmer for 30 minutes stirring occasionally.
Add the kale and zucchini. Cook for an additional 10 minutes.
Stir in lemon juice and water until you’ve reached desired consistency.
