Watermelon Gazpacho

Now this is our favorite taste of summer! This Watermelon Gazpacho is served cold giving you a refreshing meal to enjoy all summer long.

  • 3 cups cubed watermelon
  • ½ cucumber peeled and chopped
  • 1 tbsp red onion
  • 1 tomato chopped
  • 1 cup Zoup! Good, Really Good® Chicken Broth
  • cup cilantro
  • 1 tbsp lemon juice
  • 1 tbsp vinegar
  • ½ tbsp mint
  • 1 tsp hot sauce
  • Dash of chili powder
  • Dash of Italian seasoning
  • Dash of salt


  1. Blend all ingredients in a blender until smooth. Serve chilled and garnishh with tomato, cucumber and mint.
