Easy, Vegan Pumpkin Soup
Try this comforting, super easy, vegan Pumpkin Soup.

Ingredients
- 2 tbsp olive oil
- 4 cloves of garlic minced
- ½ onion chopped
- 1 carrot chopped
- 1 tsp oregano
- 1 tsp ginger
- 1 tsp thyme
- Pinch of red pepper flakes
- Pinch of turmeric
- 1 can pumpkin
- 2 tbsp maple syrup
- ¼ cup coconut milk
- 1 jar of Zoup! Good Really Good® Veggie Broth
Instructions
- Add olive oil to a pan and heat on medium-high heat. Then saute the garlic, onion, carrot and spices together until veggies are tender.
- Once the veggies are cooked, place in a blender and blend veggies with all remaining ingredients until smooth.
- Return soup to a pan and heat until desired temperature. Serve with coconut milk drizzle and pumpkin seeds for garnish.
