Lentil Vegetable Soup
Add some veggies into the rotation with this delicious Lentil Vegetable Soup.

Ingredients
- tbsp olive oil
- 1 ½ cups diced carrot
- 1 yellow onion chopped
- 4 cloves of garlic minced
- 2 cups of Zoup! Good Really Good® Veggie Broth
- 2 cans diced tomatoes
- 1 cup of dried lentils
- 1 tsp dried basil
- ½ tsp oregano
- ½ tsp thyme
- 1 medium zucchini diced
- 2 cups packed kale
- 1 tbsp lemon juice
- 1 cup water
- Salt and pepper to taste
Instructions
- Add olive oil to a large soup pot and saute the carrot, onion and garlic until the onion is translucent.
- Add Zoup! Good, Really Good® Veggie Broth and tomatoes, stir until well combined. Add lentils and spices. Bring to a boil, cover and simmer for 30 minutes stirring occasionally.
- Add the kale and zucchini. Cook for an additional 10 minutes.
- Stir in lemon juice and water until you’ve reached desired consistency.
