Tomato Cucumber Gazpacho

When the weather is hot, we look for a meal that will cool us down! Try this good, really good Gazpacho made with Zoup!
Total Time: 15 minutes

Ingredients

  • 4 tbsp white wine vinegar
  • ½ cup Zoup! Good Really Good® Veggie Broth
  • cup almonds
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 3 cups chopped tomatoes
  • ½ cucumber chopped
  • ½ red bell pepper chopped
  • 2 scallions chopped
  • A few mint leaves plus more for garnish

Instructions

  • Place all ingredients into a food processor or blender. Blend until smooth. Then taste and season with salt and pepper. Chill in refrigerator before serving.
  • Pour into bowls and garnish with tomato, cucumber, mint and olive oil.

  • 2.5 cups mango
  • 2 cups veggie broth
  • 5 strawberries
  • 1 tsp ginger
  • 1 tbsp honey

Instructions

  • Blend all ingredients and then pour into popsicle molds. Freeze overnight and enjoy!

Spicy BBQ Sauce

Spice up your BBQ sauce! Our Spicy Chicken Bone Broth is our secret weapon for our favorite BBQ sauce.

Ingredients

  • 1 slice bacon
  • ½ an onion grated
  • ¼ cup tomato paste
  • 2 tbsp mustard
  • 3 tbsp maple syrup
  • 2 tsp apple cider vinegar
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp garlic powder
  • tsp chili powder
  • 1 cup Zoup! Good Really Good® Spicy Chicken Bone Broth

Instructions

  • Cook bacon in a saucepan over medium heat. Remove and drain on paper towel once bacon is crispy. Add onion to the bacon grease and cook until onion is translucent.
  • Add in the tomato paste, mustard, apple cider vinegar, paprika, salt, pepper, garlic powder and chili powder. Stir until well combined. Add the Zoup! Good, Really Good® Spicy Chicken Bone Broth and whisk until smooth.
  • Chop the bacon into small pieces and add to the sauce. Bring to a boil and then reduce to simmer. Simmer for 30 minutes or until the sauce thickens. Let cool and store in the refrigerator.

Ingredients

  • 4 oz Zoup! Good Really Good® Spicy Chicken Bone Broth
  • 2 oz vodka
  • 4 oz tomato juice
  • ¼ tsp Worcestershire sauce
  • ½ tsp horseradish sauce
  • ¼ tsp lemon juice
  • Pepper and hot sauce to taste
  • Celery lemon and olives for garnish

Instructions

  • Combine all ingredients in a cocktail shaker over ice. Shake until well combined.
  • Pour over highball glass filled with ice.
  • Garnish with celery, lemon and olives. Enjoy!

Shrimp Paella

We'd love some more paella and a siesta too! Our new Seafood Broth is the perfect ingredient to make your paella sing!

Ingredients

  • 1 tbsp olive oil
  • 1 cup chopped red bell pepper
  • ¾ cup chopped onion
  • 1 cup paella rice
  • cup chopped tomato
  • ½ tsp turmeric
  • 1 tsp paprika
  • 1 tbsp minced garlic
  • ¾ tsp salt
  • 3 cup Zoup! Good Really Good® Seafood Broth
  • 1 cup frozen peas
  • 1 lb shrimp
  • 1 tbsp parsley for garnish

Instructions

  • Heat olive oil over medium heat in large skillet. Add the bell pepper, onion and rice to a pan. Cook stirring frequently until veggies are tender – about 3 minutes.
  • Add the chopped tomatoes, turmeric, paprika, minced garlic and salt. Cook another 3 minutes stirring occasionally.
  • Add the Zoup! Good, Really Good® Seafood Broth and bring to boil. Boil for 5 minutes.
  • Reduce to simmer and cook for approximately 5 minutes or until most of the broth has been absorbed.
  • Sprinkle the peas and shrimp over the rice and cover with lid or aluminum foil. Cook for another 10 minutes or until all liquid is absorbed.
  • Garnish with fresh parsley and lemon, serve and enjoy!

Lemon, Chickpea & Rice Soup

Thirty minutes is all you need for this easy Lemon Chickpea Rice Soup made with our Zoup! Good, Really Good® Broth.

Ingredients

  • tbsp olive oil
  • 1 white onion chopped
  • 3 carrots peeled and chopped
  • 10 cloves garlic minced
  • ¾ cup rice
  • 2 tsp italian seasoning
  • 1 tsp red pepper flakes
  • 8 cups Zoup! Good Really Good® Chicken Broth
  • 1 sprig of rosemary
  • ½ tsp black pepper to taste
  • 2 15 oz cans of chickpeas
  • ½ cup lemon juice
  • Salt to taste

Instructions

  • dd olive oil to large pot over medium heat. Add onion and carrot and cook until onions are translucent.
  • Add garlic, rice, italian seasoning, and red pepper flakes. Cook for about 2 more minutes.
  • Add Zoup! Good, Really Good® broth and rosemary. Increase heat to high. Once it begins to boil, reduce to low and simmer for 10 minutes.
  • Add chickpeas and cook for another 3 minutes. Then turn heat off and add lemon juice and salt to taste.

Watermelon, Cucumber & Mint Quinoa

The secret to the tastiest quinoa? Zoup! Good, Really Good®broth. Simply follow the cooking instructions for your couscous but replace water with broth.

Ingredients

  • 1 ¼ cups Zoup! Good Really Good® Veggie Broth
  • 1 cup couscous
  • ½ tsp salt
  • 2 limes
  • 2 tbsp EVOO
  • 1 tsp honey
  • Pepper to taste
  • 1 ½ cups cubed watermelon
  • ½ cup cucumber
  • ¼ cup mint
  • ½ cup crumbled feta cheese

Instructions

  • Place Zoup! Good, Really Good® broth in a medium sauce pan and bring to a boil. Remove from heat and stir in couscous. Let sit for 10 minutes or until all liquid is absorbed. Fluff up with fork.
  • Meanwhile, zest the limes and squeeze the fruit until you have about 3 tbsp lime juice. Add to small bowl and mix in EVOO, honey and salt & pepper to taste.
  • Once the couscous has cooled, add the watermelon, cucumber, mint, feta and dressing. Stir to combine and enjoy!

We’ve perfected the classic chili and you won’t have it any other way after this! Our Spicy Chicken Bone Broth takes your classic chili to a whole new level.

Ingredients

  • 1 tbsp olive oil
  • 1 onion chopped
  • 1 lb ground beef
  • ¾ tsp salt
  • 2 tsp chili powder
  • ½ tsp cumin
  • ¼ tsp pepper
  • 2 cans of tomato paste 12 oz
  • 2 cups of Zoup! Good Really Good® Spicy Chicken Bone Broth
  • 1 can chopped tomatoes w/ chilis
  • 1 can black beans
  • 2 cans kidney beans

Instructions

  • In a large pot, add olive oil on medium heat. Add chopped onion and saute until onion is translucent.
  • Add ground beef and brown. Combine with onions. Once combined, add your spices to the meat and stir so that it is evenly covering the meat and onions.
  • Then add Zoup! Good, Really Good® Spicy Chicken Bone Broth and 2 cans of tomato paste. Stir together until broth and tomato paste creates a saucy texture.
  • Add chopped tomatoes, black beans and kidney beans. Stir until well combined. Cook on low to medium heat for 30 minutes, stirring occasionally.
  • Serve hot and enjoy garnished with fresh cilantro, peppers, sour cream and cheese.

One-Pot Pasta Dinner

Ingredients

  • 4 cups of Zoup! Good Really Good® Veggie Broth
  • 8 oz linguine
  • 1 pint cherry tomatoes
  • 2 oz baby spinach leaves
  • 1 small onion chopped
  • 3 garlic cloves sliced
  • Handful of basil
  • 2 tbsp EVOO
  • ½ tsp crushed red pepper
  • ½ tsp salt

Instructions

  • Add 8 oz linguine, 1 pint cherry tomatoes (sliced in half), 2 oz baby spinach leaves, 1 small onion chopped, 3 garlic cloves sliced, small handful chopped basil, 2 tbsp EVOO, 1/2 tsp crushed red pepper, and 1/2 tsp salt. Pour 4 cups of Zoup! Good Really Good® Veggie Broth into pan and bring to boil.
  • Cook 8 – 10 minutes or until liquid is nearly evaporated.
  • Serve and enjoy!

Ingredients

  • 1 onion
  • 2 cloves of garlic
  • 2 heads of broccoli
  • 4 cups of Zoup! Good Really Good® Veggie Broth
  • 2 cups frozen peas
  • ½ cup mint leaves
  • 2 cups spinach
  • S&P

Instructions

  • Saute onion and garlic in pan with olive oil. Add 2 heads of broccoli chopped in florets and 4 cups of Zoup! Good, Really Good® Veggie Broth. Bring to a boil.
  • Reduce to simmer for 30 minutes. Then add 2 cups of frozen peas and cook until soft.
  • Let cool slightly and then add to blender. Add mint leaves, spinach, salt and pepper to taste. Blend until smooth.
  • Then warm, serve and garnish with your favorite toppings. Alternately, this soup can also be enjoyed chilled if you are looking for a refreshing soup.

Grilled Cheese Croutons and Tomato Soup

There is nothing Grilled Cheese and Tomato Soup can't fix. So you better believe, we've discovered the secret to the best bowl of tomato soup out there.

Ingredients

Ingredients for Soup:

  • 2 Tbsp. extra-virgin olive oil
  • 1 Tbsp. unsalted butter
  • 1 large white onion finely chopped
  • 1 large clove garlic smashed and peeled
  • 2 Tbsp. all-purpose flour
  • 3 cups Zoup! Good Really Good® Chicken Broth
  • 28- oz. can whole peeled tomatoes puréed (include the juice)
  • 1-1/2 tsp. sugar
  • 1 sprig fresh thyme
  • Salt
  • Pepper
  • 3 Tbsp. sliced fresh basil

Ingredients for Grilled Cheese:

  • 1 Tbsp unsalted butter
  • 4 slices of bread of choice
  • 8 slices of cheddar cheese

Instructions

Directions for Soup:

  • Heat the oil and butter over medium-low heat until the butter melts. Add the onion and garlic for 8 minutes or until soft.
  • Add the flour and stir to coat the onion and garlic.
  • Add the Zoup! Good, Really Good Broth, tomatoes, sugar, thyme, and 1/4 tsp. each salt and pepper. Bring to a simmer over medium-high heat.
  • Reduce heat to low, cover, and simmer for 30 minutes. Discard the thyme sprig.
  • Let cool and then purée in a blender or food processor. Return the soup to the pot and serve warm.

Directions for Grilled Cheese:

  • Preheat pan over medium heat.
  • Butter one side of a slice of bread. Place bread butter-side-down onto pan bottom and add 2 slices of cheese. Butter a second slice of bread on one side and place butter-side-up on top of sandwich.
  • Grill until lightly browned and flip over; continue grilling until cheese is melted. Repeat with remaining 2 slices of bread, butter and slice of cheese.
  • Once sandwiches are complete, cut into small cubes to top your soup with. Alternately, you can cut them into strips for easy dunking.

Beet Gazpacho

Beet Gazpacho

Check out this Beet Gazpacho topped with cucumber and chives for a refreshing twist on the typical soup!
Total Time: 1 hour

Ingredients

  • 2 medium beets
  • 1 cup Zoup! Good Really Good® Veggie Broth
  • cup onion diced
  • 1 cucumber chopped
  • 1 garlic clove
  • 1/4 cup dill
  • 1 tbsp white wine vinegar

Instructions

  • Place beets in a medium pot and cover with water. Bring to a boil and then turn heat down to low to simmer. Simmer for 50 minutes or until fork can go through them and they feel tender.
  • Transfer cooked beets to plate and let them cool. Once cool enough to handle, gently slip off the skins with your hands. Slice beets and place in blender with Zoup! Good, Really Good® Veggie Broth.
  • Add remaining ingredients and blend until smooth. Taste and adjust salt, pepper and vinegar to your liking. Place into refrigerator until ready to serve.
  • Garnish with cucumber, avocado, dill, green onion, or even a swirl of Greek yogurt. Get creative and enjoy!
