Butternut Squash & Persimmon Soup

This Butternut Squash Soup with persimmons tastes like fall in each spoonful.

Ingredients

  • 2 cups of cooked butternut squash cubed
  • 2 tbsp olive oil
  • ¼ medium onion diced
  • 1 clove garlic crushed
  • 2 persimmons
  • 1 ½ cups Zoup! Good Really Good® Veggie Broth
  • ½ cup coconut milk
  • Salt and pepper to taste
  • ¼ cup chopped pecans
  • Pomegranate seeds and cilantro to garnish

Instructions

  • Peel and dice your persimmons.
  • Add olive oil to medium pan and saute onions. Then add the persimmons and cook until tender. Add in the squash and stir.
  • Add in broth and bring to a boil. Then add coconut milk and simmer for a few minutes.
  • Add to a blender and blend on high until smooth. Serve warm and top with persimmons, pomegranate seeds, chopped pecans and cilantro.

Sweet Potato Casserole

Sweet Potato Casserole

Try this recipe using broth for the most creamy, tasty casserole on the Turkey Day table.

Ingredients

  • lbs sweet potatoes
  • 1/2 cup Zoup! Good Really Good® Chicken Broth
  • ½ tsp vanilla extract
  • ½ tsp cinnamon
  • ½ cup pecans
  • Dash of salt
  • cups brown sugar
  • 2 tbsp butter melted
  • 1 cup mini marshmallows

Instructions

  • Wash and dry sweet potatoes. Then wrap each potato with foil. Place them on a baking sheet lined with foil. Heat oven to 375 degrees and bake for 1 hour. Continue to bake until they can be easily pierced with a knife.
  • Cool until they are easy to handle. Peel and transfer to a blender. Puree the sweet potatoes until mashed. Then add in the Zoup! Good, Really Good® Chicken Broth, vanilla and cinnamon and mix on low speed until well combined.
  • Transfer the potatoes to an oven-safe casserole dish and spread out evenly. Reduce temperature to 350 degrees.
  • In a medium bowl, combine crushed pecans, dash of cinnamon, brown sugar and melted butter. Stir to combine.
  • Spread the pecan topping over the sweet potatoes. Then place in oven and bake for 25 minutes.
  • Remove the casserole from the oven once the topping is golden brown. Then add a layer of mini marshmallows and bake for an additional 10 minutes or until marshmallows are golden brown.

Creamy Chicken Noodle Soup

A delicious spin on a classic chicken noodle recipe.

Ingredients

  • 1 tbsp butter
  • ¾ cup chopped carrots
  • ½ cup chopped onion
  • ½ cup chopped celery
  • 2 cloves garlic minced
  • 2 tsp Italian seasoning
  • 5 cups Zoup! Good Really Good® Low Sodium Chicken Broth
  • 8 oz of egg noodles
  • 1 cup of chopped cooked chicken
  • ½ cup milk
  • 1 ½ tsp cornstarch
  • Salt & pepper to taste

Instructions

  • eat medium-large pot on medium and melt butter in pan. Then add the carrots, onion and celery and cook until onions are translucent and celery is tender. Add the garlic, Italian seasoning, salt & pepper and cook for 5 minutes.
  • Add the broth and bring to a boil. Add the noodles and shredded chicken. Cook the noodles according to the package.
  • Combine the milk and cornstarch together. Then pour slowly while stirring.
  • Serve while hot and enjoy!

French Onion Soup

French Onion Soup

A classic French Onion Soup recipe made in a pressure cooker.
Total Time: 1 hour

Equipment

  • Pressure cooker

Ingredients

  • 3 onions thinly sliced
  • 1 ½ tbsp butter
  • 1 bay leaf
  • ½ cup sherry
  • ½ tbsp fresh thyme chopped
  • 1 clove garlic
  • ½ tsp pepper
  • ½ tbsp salt
  • 1 jar of Zoup! Good Really Good® Beef Bone Broth
  • 6 oz gruyere shredded
  • 1 baguette

Instructions

  • Turn pressure cooker on to “saute” mode. Add butter and then saute the onions until they are tender and slightly translucent.
  • Turn pressure cooker off. Then turn back on and set to “Pressure Cook” on High for 20 minutes.
  • Once the timer goes off, use the quick release valve to release the steam and then open.
  • Turn the pressure cooker back on to Saute mode and cook 15 minutes or until brown.
  • Then add all ingredients except the cheese and bread. Set on “Pressure Cook” on High for 10 minutes.
  • Turn oven on to Broil. Then pour your soup into oven-safe bowls. Top with two slices of baguette and lots of gruyere shredded cheese. Place in oven until all cheese is melted – approximately 2 – 3 minutes.

Ingredients

  • 3 lb Short Rib
  • ½ onion diced
  • 6 garlic cloves minced
  • 2 carrots peeled and diced
  • 1 celery stalk diced
  • 2 tbsp flour
  • 1 cup red wine
  • 2 cups Zoup! Good Really Good® Beef Broth
  • 2 tbsp tomato paste
  • 1 tbsp rosemary chopped
  • ½ tsp dry basil
  • 1 tbsp parsley chopped
  • ½ tsp red pepper flakes
  • ¼ tsp pepper
  • 1 tsp oregano
  • ½ tsp italian seasoning
  • ¼ tsp thyme
  • 2 bay leaves

Instructions

  • Season the short ribs generously with salt and pepper.
  • Turn the pressure cooker on to “saute mode.” Brown the short ribs on all sides and then remove from the pressure cooker.
  • Then add the onion, garlic, carrots and celery to the pressure cooker and saute until the veggies are tender.
  • Then add the remaining ingredients and return the short ribs to the pressure cooker. Change the mode on the pressure cooker from “saute” to “pressure cooker.” Select the “meat/stew” mode and cook on high for 35 minutes.
  • Once the timer goes off, you can either slow or quick release. Serve short ribs alongside some garlic mashed potatoes.

  • Pinch of turmeric
  • 1 can pumpkin
  • 2 tbsp maple syrup

Instructions

  • Add olive oil to a pan and heat on medium-high heat. Then saute the garlic, onion, carrot and spices together until veggies are tender.
  • Once the veggies are cooked, place in a blender and blend veggies with all remaining ingredients until smooth.
  • Return soup to a pan and heat until desired temperature. Serve with coconut milk drizzle and pumpkin seeds for garnish.

  • 1 lb Ground Turkey
  • 1 ½ cup small pasta noodle

  • 1 tbsp Olive Oil
  • ½ cup diced onion
  • 2 tbsp minced garlic
  • 2 bay leaves
  • 2 tbsp Italian seasoning

Instructions

  • Turn the pressure cooker on to “Saute” mode. Add the olive oil, onion and garlic. Saute until the onion is translucent.
  • Then add the ground turkey to the pressure cooker and saute until turkey is browned and fully cooked.
  • Add remaining ingredients. Turn the pressure cooker from “saute” to “pressure cook” on High. Set the pressure cooker timer for 3 minutes.
  • Please note, that the pressure cooker will take longer than 3 minutes to pressurize and heat to the right temperature.
  • Once the timer goes off, you can quick release or slow release the pressure cooker. Serve and enjoy!

Ingredients

  • 1 lb flank steak
  • 8 oz pappardelle pasta
  • 16 oz crushed tomato sauce
  • 1 cup Zoup! Good Really Good Beef Broth
  • 1 tbsp basil
  • 1 tbsp rosemary
  • 1 tbsp thyme
  • 2 tbsp butter
  • 3 tsp minced garlic
  • 1 tsp oregano
  • Salt and pepper to taste

Instructions

  • Cut the beef into 2 – 3 pieces. Season both sides of stead with salt, pepper and garlic powder.
  • Add 1 tbsp of butter to a medium pan and heat on medium-high heat. Sear both sides of your flank steak until nicely browned, then remove from heat.
  • Turn your pressure cooker on and set it to High for 35 minutes. Add butter and minced garlic. Then place steak on top. Then add all remaining ingredient to the pot.
  • Close the lid and let it cook for 35 minutes. Then slow release for 20 minutes.
  • While your meat is cooking, cook pasta according to directions. Drain and set aside.
  • Once the meat is cooked, remove from Instant Pot and shred the meat on a separate plate with two forks. Then add meat and sauce to pasta and enjoy!

Ingredients

  • 2 tbsp butter
  • 1 lb shrimp
  • Salt and pepper to taste
  • 3 garlic cloves minced
  • 1 cup heavy cream
  • ½ cup Zoup! Good Really Good® Seafood Broth
  • ½ cup parmesan cheese shredded
  • 8 oz spaghetti
  • 1 tsp red pepper flakes
  • Parsley and lemon for garnish

Instructions

  • Boil water to prepare the pasta. Follow instructions for cooking 8 oz of pasta, so once your shrimp and sauce is finished, you can incorporate into the sauce.
  • In a separate large saucepan, melt butter in a pan over medium and add shrimp and garlic. Season shrimp with salt and pepper. Cook shrimp until pink on both sides.
  • Add cream, Zoup! Good, Really Good® Seafood Broth and parmesan cheese. Cook until smooth and liquid begins to get thick.
  • Then add red pepper flakes – adjust the amount to your desired level of spice.
  • Once pasta is finished, drain water and add pasta to your shrimp and sauce. Serve pasta with shrimp and garnish with parsley and lemon.

White Beans with Rosemary & Garlic

Ingredients

  • 1 cup dry white beans
  • 2 cups water
  • 1 tsp baking soda
  • 4 cups of Zoup! Good Really Good® Veggie Broth
  • 3 cloves garlic diced
  • 2 sprigs rosemary
  • ¼ onion cut into wedges
  • ½ tsp salt
  • 2 tbsp olive oil
  • 1 tbsp lemon juice

Instructions

  • Soak the beans in water and baking soda overnight. The beans will double in size.
  • Add the beans, Zoup! Good, Really Good® Veggie Broth, garlic, rosemary, and onion to a Crockpot. Cover and cook on high for 6 hours or until beans are tender. Depending on how soupy you like your beans, you may want to add more Zoup! Good, Really Good® Veggie Broth.
  • Once the beans are finished, serve in a bowl and garnish with olive oil, lemon juice, rosemary and salt and pepper.

  • 1 tbsp sesame oil
  • 4 skinless boneless chicken thighs
  • 1 garlic clove crushed
  • 1 tbsp grated ginger

  • 1 tsp soy sauce
  • 1 cup of mushrooms
  • 1 package of udon noodles
  • 1 tbsp peanut butter
  • 1 tbsp water
  • 1 tsp soy sauce
  • 1 tsp honey
  • 1 tsp sriracha

Instructions

  • Heat sesame oil in a medium pan. Season chicken with salt and pepper and then place in pan. Brown each side.
  • Add garlic and ginger and coat the chicken while cooking.
  • Add 2 cups of Zoup! Good, Really Good® Chicken Bone Broth and soy sauce. Bring to a boil.
  • Cover and simmer for 30 minutes or until chicken begins to fall apart.
  • While the chicken is cooking, mix together the peanut butter, water, soy sauce, honey and sriracha to make your spicy peanut sauce.
  • Once the chicken is finished cooking, remove from the pan and shred the chicken. Add the mushrooms to the pan and cook for about 5 minutes. Add the rest of the Zoup! Good, Really Good® Chicken Broth, shredded chicken, and bring to a boil.
  • Then add the udon noodles and cook according to the cooking instructions on the package.
  • Once noodles are cooked, serve immediately. Garnish with green onions, peanuts, peanut sauce, and lime.

Ingredients

  • 1 lb of bone-in skin-on chicken thighs or legs
  • 1 cup Zoup! Good Really Good® Chicken Broth
  • Juice of ½ lemon
  • 1 can of artichokes
  • 2 tbsp butter
  • ¼ cup finely chopped onion
  • 4 garlic cloves minced
  • 1 sprig of rosemary
  • Salt and pepper

Instructions

  • Season all sides of chicken with salt and pepper. Then heat 2 tbsp of olive oil in a medium/large skillet. Sear the chicken so there is a nice golden brown color to the outside of the skin.
  • Remove the chicken from the pan and set aside on a plate. Then add 2 tbsp of the Zoup! Good, Really Good® Chicken Broth to the pan to deglaze. Add 1 tbsp of butter.
  • Add onions and garlic to the pan. Saute until the onions are translucent. Add artichokes and continue to saute until artichokes are slightly browned.
  • Then add chicken back to pan and cover with broth, lemon juice and rosemary sprig.
  • Cover and simmer for 25 minutes until chicken is thoroughly cooked and most of liquid has been absorbed.
