Salmon with Creamy Pepper Sauce

This salmon dish will sure to become a new staple in your weekly dinner menu! Enjoy this creamy sauce with marinated bell peppers with your seared salmon all cooked to perfection with our Zoup! Good, Really Good Seafood Broth.

Ingredients

  • 4 salmon fillets
  • 3 tbsp olive oil
  • 4 oz sun-dried tomatoes
  • 10 oz marinated roasted bell peppers
  • 1 shallot chopped
  • 4 garlic cloves minced
  • ½ cup Zoup! Good Really Good® Seafood Broth
  • ¼ cup heavy cream
  • ½ cup mascarpone
  • ½ cup parmesan cheese
  • 1 tbsp lemon juice
  • Salt and pepper
  • Basil leaves for garnish

Instructions

  • Pat the salmon dry with a paper towel and season with salt and pepper.
  • Heat olive oil in a pan over medium high heat. Add the salmon and sear for 4 minutes each side. Remove and set aside.
  • Add the shallot to pan and cook over low heat for 1 – 2 minutes. Stir in the garlic and cook for another minute. Add the Zoup! Good, Really Good® Seafood Broth to deglaze the pan. Add the sun dried tomatoes, bell peppers, and cream.
  • Once it starts to boil, add the mascarpone and parmesan cheese. Stir until creamy. Add the salmon back to the sauce. Sprinkle with lemon juice and continue to cook until salmon is cooked through and sauce is thickened.
  • Remove from heat, garnish with basil and enjoy!

We love a bowl of soup. But we especially love a bowl of soup we can also eat!
This Clam Chowder recipe is so easy to make using our Seafood Broth and is extra special in a bread bowl
Cook Time: 45 minutes

Equipment

  • saucepan
  • large pot

Ingredients

  • 1 tbsp olive oil
  • 1 onion chopped
  • cup celery chopped
  • 2 garlic cloves minced
  • 32 oz chopped raw clams
  • 4 cups Zoup! Good Really Good® Seafood Broth
  • 5 red potatoes diced
  • 2 ½ cups heavy cream
  • 10 tbsp butter
  • cup flour
  • Salt and pepper to taste

Instructions

  • In a medium saucepan, saute onion, celery and garlic in olive oil until onion is translucent.
  • In a large soup pot, bring clams, Zoup! Good, Really Good® Seafood Broth and potatoes to a boil. Reduce to a simmer and add the onion, celery and garlic into the pot.
  • In the skillet, melt the butter over medium heat. Whisk in the flour and turn heat to low. Stir until fully incorporated. Turn the heat off and stir in the cream until smooth.
  • Add the cream mixture into the soup pot and stir until combined. Season with salt and pepper to taste. Simmer for 15 minutes.
  • To serve in a bread bowl, carve out the center of a round loaf. Then fill the bread bowl with chowder. Garnish with croutons and parsley and enjoy!

Get ready to bite into some serious nostalgia. Today we're cooking up our favorite Tuna Casserole made with Zoup! Good, Really Good Seafood Broth and our favorite Safe Catch Foods tuna!
Cook Time: 40 minutes
Servings: 6

Ingredients

  • 2 tbsp butter
  • 1 yellow onion chopped
  • 8 stalks celery chopped
  • 4 cloves garlic minced
  • ½ tsp salt
  • ½ tsp pepper
  • cup flour
  • 2 cups Zoup! Good Really Good® Seafood Broth
  • 1 cup whole milk
  • 8 oz pasta
  • 2 cups frozen peas
  • 2 cans Safe Catch Tuna
  • 12 oz shredded cheddar cheese
  • ½ cup panko breadcrumbs
  • 2 tbsp fried onions

Instructions

  • Boil water and prepare pasta noodles.
  • Preheat oven to 425 degrees fahrenheit. Grease a 9×13 inch baking dish and set aside.
  • Melt butter in a large pan and saute onion, celery, garlic, salt and pepper until translucent.
  • Sprinkle the flour over the vegetables and cook for 1 minute until well coated. Slowly tir in the Zoup! Good, Really Good® Seafood Broth and milk. Bring to a simmer.
  • Add the frozen peas and let the liquid thicken. Then add 1 cup of cheddar cheese and stir until melted. Stir in the tuna and cooked noodles.
  • Pour into a casserole dish and top with remaining cheese. Sprinkle with panko crumbs and fried onions.
  • Bake for 15 – 20 minutes or until golden brown.

One pan skillet meal is just what we need! We are loving this Keto-Friendly Creamy Garlic Shrimp with Sundried Tomato. We kicked it up a notch using our Zoup! Good, Really Good Seafood Broth to compliment the shrimp.

Ingredients

  • 2 tbsp oil from sun-dried tomato jar
  • 1 lb shrimp peeled and deveined
  • ½ onion chopped
  • 2 garlic cloves minced
  • ¼ cup chopped sundried tomatoes
  • ½ cup Zoup! Good Really Good® Seafood Broth
  • 1 cup heavy cream
  • ½ tsp paprika
  • ½ tsp chili flakes
  • 1 cup grated parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  • In a large skillet, heat the oil over medium heat. Season the shrimp with salt and pepper. Cook shrimp until pink on both sides. Remove from pan.
  • In the same skillet, saute the onion, garlic and sundried tomatoes until onions are translucent.
  • Add the Zoup! Good, Really Good® Seafood Broth, stir and heat until liquid is reduced. Turn heat down to low.
  • Add the cream, paprika, and chili flakes. Stir until well combined. Add the parmesan and stir until melted into the sauce.
  • Add the shrimp back and reheat. Sprinkle with fresh basil and enjoy!

If we are going to enjoy soup in the Summer, it's gotta be packed with seafood. Our Zoup! Good, Really Good Seafood Broth is the perfect base for this Seafood Stew complete with shrimp, mussels and halibut.
Cook Time: 40 minutes
Servings: 3

Ingredients

  • 3 oz cooked chorizo
  • 1 cup diced fennel
  • ½ cup chopped onion
  • 2 garlic cloves smashed & sliced
  • 1 tbsp tomato paste
  • ½ cup white wine
  • 2 cups of Zoup! Good Really Good® Seafood Broth
  • 1 can diced tomatoes
  • 4 oz halibut
  • ½ lb mussels
  • ½ lb shrimp
  • Salt & pepper to taste

Instructions

  • Heat olive oil over medium heat and saute the fennel. Once the fennel has softened slightly, add the onion and cook until tender. Add garlic and continue to saute until golden.
  • Add the tomato paste and stir until well combined. Add the white wine, Zoup! Good, Really Good® Seafood Broth, tomatoes, and chorizo. Bring to a simmer.
  • Add the halibut and shrimp. Simmer for a few minutes and then add your mussels. Cook until the mussels are fully opened. Serve immediately and season to taste with salt, pepper and lemon.

Going camping this summer? We love these Campfire Jambalaya packets you can cook over a BBQ, campfire or even in your oven at home.
Cook Time: 40 minutes

Ingredients

  • Aluminum Foil
  • Nonstick cooking spray
  • 14 oz Kielbasa sliced
  • ½ lb shrimp
  • ¼ cup olive oil
  • 1 can of diced tomatoes
  • 1 onion chopped
  • 1 bell pepper chopped
  • 1 cup of chopped celery
  • 2 cloves of garlic minced
  • 1 ½ tsp cajun seasoning
  • Salt and pepper to taste
  • 1 cup Instant rice
  • 1 cup Zoup! Good Really Good® Seafood Broth

Instructions

  • If using a grill or oven, preheat to 400 degrees. If cooking over a campfire, cook for 20 – 40 minutes depending on how hot your coals are.
  • Cut large sheets of aluminum foil. Coat foil with nonstick cooking spray. Set aside.
  • In a large mixing bowl, toss together all the ingredients.
  • Divide mixture evenly among each sheet of foil. Fold the aluminum foil together into a tight package.
  • If you are cooking in the oven, place packets on a sheet pan. Otherwise, you can place your packets directly on the grill or campfire. Cook for 30 minutes or until shrimp is pink and rice is cooked.

Ingredients

  • 1 lb raw shrimp
  • 2 tbsp EVOO
  • ¾ cup Zoup! Good Really Good® Seafood Broth
  • 1 tbsp lemon juice
  • 1 bell pepper chopped
  • ½ cup chopped onion
  • 1 lb asparagus
  • 1 zucchini
  • 1 tsp lemon zest
  • 3 cloves of garlic minced
  • Salt and pepper

Instructions

  • In a large skillet, heat olive oil over medium heat. Add the shrimp, salt and pepper and cook for 1 – 2 minutes or until shrimp is cooked through.
  • Once the shrimp are fully cooked, remove from pan. If needed, add a bit more olive oil to the pan and then add the onion, bell pepper, asparagus, zucchini, lemon zest, and garlic. Cook until the vegetables are beginning to soften.
  • Add the chicken broth and lemon to the vegetables. Then add the shrimp and combine. Remove from heat and enjoy alone or over rice.

Ingredients

  • 2 Salmon Fillets
  • 1 tbsp olive oil
  • ¼ finely chopped onion
  • 1 ½ minced garlic cloves
  • 1 tsp crushed red pepper
  • ½ cup heavy cream
  • ½ cup Zoup! Good Really Good® Seafood Broth
  • ¼ cup shredded parmesan cheese
  • 3 tbsp lemon juice
  • 1 cup couscous
  • ¼ cup Zoup! Good Really Good® Chicken Broth
  • Fresh dill and chives for garnish
  • Lemon slices for garnish we grilled them to give a smoky flavor

Instructions

  • In a medium pot, prepare couscous per directions but swap the water for Zoup! Good, Really Good® Chicken Broth to give it a richer taste.
  • While the couscous is cooking, heat the pan over medium-high heat until the pan is very hot. Add olive oil and then grill salmon, skin side down, for 4-5 minutes. Carefully flip salmon and cook for another 4 minutes.
  • Remove the salmon from pan and set aside. In the same pan, saute the chopped onion and garlic until softened. Then add crushed pepper, cream, Zoup! Good, Really Good® Seafood Broth, parmesan and lemon. Cook until well combined and parmesan is melted.
  • Return the salmon to the sauce and cook for a few more minutes.
  • Add prepared couscous to the salmon dish. Garnish with chopped chives and fresh dill and enjoy!

Ingredients

  • 1 lb clams
  • 3 tbsp butter
  • cup chopped onion
  • 2 cloves minced garlic
  • ¼ cup white wine
  • cup Zoup! Good Really Good® Seafood Broth
  • 2 tbsp lemon
  • ¼ cup heavy cream
  • Lemon sliced for serving

Instructions

  • Place the clams in a large bowl and cover with cold water. Let sit for at least 30 minutes. Drain and rinse clams.
  • In a large pot with lid, melt butter over medium heat and saute onions until translucent. Add garlic and cook for a few more minutes. Stir in wine, broth, and lemon and bring to a boil. Reduce heat to medium and simmer.
  • Add the clams to the broth and cover the pot with a lid. Cook clams for approximately 8 minutes or until clams are open.
  • Serve immediately with bread. Add more lemon, salt and pepper to taste. Enjoy!
